The article presents the technological process of traditional wine-making in Melnik: from the particular late grape harvesting, through the types of wine vessels and their preparation for use, the stages of fermentation, the care of the young wine, the local cellar types, and the characteristics of the Melnik wine with its proven qualities, centuries of use, local varieties and grape products. The traditions of everyday, festive and ritual use of wine in the Melnik wine-growing region, the importance of wine in the traditional ritual system, and the traditional calendar holidays are the subject of the text.
