Description The consumption of water kiosk has been increasing in Italy. Nevertheless, only a few studies have analyzed this phenomenon and users’ behavior and preferences. The aim of this study is to fulfill this gap analysing the preferences of consumers toward water from water kiosks in Friuli Venezia Giulia Region. The data collected were analyzed firstly by means of a multinomial logit model, secondly we applied a latent class model. The findings show consumers’ concerns regarding the presence of potentially harmful chemical substances and put in evidence the opportunities in utilizing an environmental certification.
